# Expert Advice:

01 -
  • It looks like you spent hours in the kitchen when really, most of the work is just waiting for things to marinate.
  • Everything can be prepped ahead, making it the perfect stress-free party move.
  • It's naturally vegetarian and gluten-free without feeling like you're missing anything.
02 -
  • Don't skip the ice bath for eggs—warm yolks turn that unpleasant gray-green ring, and cold water stops that instantly.
  • The beet dye works fastest in the first 24 hours; after that, it deepens but more slowly, so plan accordingly for timing.
  • Fresh fruit oxidizes, so add it no more than a few hours before serving or squeeze a little lemon juice over cut surfaces to slow browning.
03 -
  • Make your pickles 24 hours ahead—this removes stress and means flavors have fully developed by the time guests arrive.
  • Slice everything uniform and thin; it's not just prettier, it speeds up pickling and makes vegetables more tender.
