# Expert Advice:

01 -
  • The brown sugar gives it a molasses depth that white sugar just cant match, almost like drinking a latte and a caramel in one sip.
  • You dont need any fancy equipment, just a bowl and a whisk, though an electric mixer saves your wrist.
  • It looks impressive enough to serve guests but takes less time than brewing a pot of coffee.
02 -
  • If your foam deflates or wont thicken, you either added too much water or your instant coffee is stale, it needs to be fresh and finely ground.
  • Whisking by hand takes about four minutes and feels like an arm workout, but the texture is worth it and somehow more satisfying than using a mixer.
  • Dont skip the stirring step before drinking, the top is intensely coffee-forward and the milk below is sweet and mild, blending them is where the magic happens.
03 -
  • If you dont have an electric mixer, put everything in a jar with a tight lid and shake it hard for about five minutes, it works but your arms will feel it.
  • The darker the brown sugar, the richer the caramel flavor, I use dark muscovado when I can find it and it tastes like toffee.
  • For a prettier presentation, drizzle a little caramel sauce on the inside of the glass before adding the milk, it creates swirls that look bakery-level impressive.
